說到出名的單一葡萄田香檳,你會想到那些呢?Krug Clos du Mesnil,Clos d’Ambonnay 還是Billecart-Salmon Clos St-Hilaire 呢?這些香檳,全部都最少要港幣幾千元。在香檳區,其中一片最佳的香檳田是Clos des Goisses,這香檳田的位置極佳,品質之高,可以令它差不多每年都能出產年份香檳!但由於它的知名度不高,價格相對低很多。但這不等如它品質低一些,主要原因是它由 Philipponnat 擁有,而 Philipponnat 的知名度遠遠不及 Billecart-Salmon,更不要和 Krug 相比。Philipponnat Clos des Goisses 可以說是內行人的秘密寶藏。

香檳權威 Richard Juhlin 就認為它是最攝人的葡萄酒之一。”Clos des Goisses is consistently one of the world’s foremost wines…. The unique slope beside the canal at Mareuil-sur-Aÿ is planted with 70 per cent Pinot Noir and 30 per cent Chardonnay. I recently held a complete vertical tasting of this personal wine. The champagnes were amongst the most ravishing I have tasted.”

另一香檳權威 Peter Liem 同樣認為Clos des Goisses 是整個香檳區最佳的香檳之一。”The Clos is able to make exceptional wines even in vintages that are not so successful in other areas….This is one of the great wines of Champagne, demonstrating an intense personality and expression of place. It requires decades to achieve full maturity, and even though the house holds it in the cellar for about ten years before release, the wise consumer will lay it down for many more years after purchase.”

This is because similar to, Pétrus in Pomerol or Quinta do Noval’s Nacional in Douro, it marches to a different beat of the drum thanks to its particular terroir.”

Clos des Goisses 面積為 5.5 公頃。它極佳的地理位置令葡萄有極高的成熟度,同時也令 Clos des Goisses 令為香檳區中最強而有力的香檳之一。這單一葡萄田,在最和暖的位置,種植了 Pinot Noir,佔60%。其餘比較清涼的 40% 則種植了 Chardonnay。一般50%的葡萄酒於不銹鋼桶發酵,其餘的50%則使用舊木桶發酵。葡萄酒一定不會進行 malolactic fermentation。香檳最少會陳年八年才推出市場。

我今次飲的是 2000 Philipponnat Clos des Goisses。由於這香檳仍然非常年青,因此我也依照生產商的建議,為香檳進行透氣。香檳進行透氣,自然會令香檳氣泡減少,但我個人從不介意氣泡減少。對我來說,令香檳氣味綻放才是最重要。這麼優質的香檳,我自然也選擇白酒杯,讓香檳氣味充分發揮。

香檳的氣味稱不上爆發,但卻具有極高的複雜性和深度,力量真的非常強大,但同時仍然非常之優雅。芳香的白花和蜂蜜的味道,非常誘人。入口同樣擁有極高的集中度和複雜性,餘韻極長。陳年潛力極高。相信再陳年多七、八年,它一定能成為一瓶能令我極為着迷的香檳。我的酒櫃只好預留幾個位置給它了。
